ReformBIO

The producers of organic products in the food segment need a strategy on how to deal with the issue of reformulation of product recipes (lowering the content of sugar, trans fats, fat content and salt). ReformBIO deals with a strategy for reformulation of finished products. The focus here is on sugar reduction. Consumer expectations of the health value of organic foods are identified, high-quality biocompatible and sensorially attractive optimization concepts are developed, and consumer-friendly labeling options are discussed.

ProBallast

Project objective: Product reformulation by increasing the fibre content in foods (Fibermaxxing). In collaboration with companies from the organic sector, recipes are being developed for six product categories, accompanied by sensory analyses to measure consumer acceptance.
