The producers of organic products in the food segment need a strategy on how to deal with the issue of reformulation of product recipes (lowering the content of sugar, trans fats, fat content and salt). ReformBIO deals with a strategy for reformulation of finished products. The focus here is on sugar reduction. Consumer expectations of the health value of organic foods are identified, high-quality biocompatible and sensorially attractive optimization concepts are developed, and consumer-friendly labeling options are discussed.
